Meat-free, main dish, hors d’oeuvres
ingredients available locally when in season
Tofu-Carrot Burgers
- 2 tablespoons olive oil, plus more for brushing
- ½ medium onion, diced
- 1 clove garlic, crushed
- 1 ½ cups grated carrots
- 1 teaspoon ground coriander
- 1 teaspoon whole cumin seed
- Pinch of cayenne
- 12 ounces tofu, mashed
- ½ cup coarsely ground almonds
- ½ cup grated cheddar cheese
- 1 tablespoon tomato paste
- 1 tablespoon chopped fresh parsley
- Salt and freshly ground pepper to taste
Heat 2 tablespoons oil in a pan. Add the onion, garlic and carrots, and cook over medium heat for 3 or 4 minutes, stirring occasionally, until onions are translucent and carrots are tender. Add the spices, toss together, and cook just a minute longer.
Transfer the mixture to a bowl. Add the tofu, ground almonds, cheese, tomato paste, parsley, and salt and pepper. Adjust seasonings to taste. Stir to combine. Let cool slightly; then divide the mixture evenly into eight portions, forming each portion into a burger.
Brush each burger with oil and place the burgers on an oiled baking sheet under the broiler. Cook for 3 or 4 minutes on each side or until burgers are golden brown. Serve alone or on buns with sweet relish, thick slices of onion and tomato, and your favorite condiments.
