Parsley Potatoes with Saffron

  • 1 ½ pounds small new potatoes, peeled
  • 2 TB unsalted butter
  • Pinch of saffron threads
  • 1 TB finely chopped parley
  • Salt and freshly ground black pepper to taste

Steam the potatoes in a steamer basket 15–20 minutes, until tender. In a skillet, melt the butter with the saffron over medium heat until it begins to foam. Add the potatoes, parsley, salt and pepper, toss to coat, and continue cooking a minute or so just until the potatoes are heated though.
