Mustard Vinaigrette

  • 2 TB Dijon mustard
  • ¼ cup white wine vinegar
  • 1 TB fresh tarragon, chopped
  • ¾ cup extra virgin olive oil
  • Salt and pepper to taste

Whisk the mustard, vinegar, tarragon, and salt and pepper together in a small bowl. While still whisking, slowly add the olive oil. Taste and add more mustard if preferred. Adjust salt and pepper to taste.
