Simple Hearty Kale Soup
- 6-8 kale leaves, washed, ribs removed and coarsely chopped
- 1 tablespoon extra-virgin olive oil
- 1 clove garlic, crushed and chopped
- ½ small yellow onion, chopped
- 2 cups water or stock
- 1 potato halved and thinly sliced
- Salt and pepper to taste
Heat oil in a pot and sauté garlic and onion until onion is translucent. Add stock and bring to a boil. Add potatoes, reduce heat to simmer, and cook until potatoes are tender (using the back of a spoon, they break easily against the side of the pot).
Stir in the kale and cook until wilted, then add salt and pepper to taste. Garnish with a drizzle of olive oil and serve with thick, crusty bread.
