Herbed Salmon with a White Balsamic Glaze
- 2 salmon fillets
- 1 tsp lemon zest, finely grated
- 1 clove garlic, finely chopped
- 2 tsp fresh thyme, finely chopped
- 1 TB or so olive oil
- ¼ cup white balsamic vinegar
- Pinch of sugar
- 2 TB butter
- ¼ cup dry white wine
- Coarse sea salt and fresh ground pepper to taste
Preheat oven to 350°F. Wash and pat dry the salmon fillets. Rub with the olive oil and season with salt and pepper.
Combine lemon zest, garlic and thyme and rub fillets with the mixture. Place fillets in a baking dish and bake for 20–30 minutes, or until cooked through (they should flake easily).
In a small skillet, heat vinegar, sugar, and wine until bubbly. Continue cooking until thickened, reduce heat, and add butter. Whisk until fully melted. Serve fillets with glaze spooned over top.
