Easy Roasted Potatoes

  • 2 lbs. waxy potatoes (red, Yukon gold, purple, etc. or a mixture)
  • 1 TBchopped fresh herbs (thyme, rosemary, parsley, etc.)
  • 2-3 TB olive oil
  • Salt and pepper to taste

Preheat oven to 400°F. Wash and dry the potatoes and cut them into `1¼" cubes. Lay them out on a baking sheet and drizzle with the olive oil then, using your hands, toss to evenly coat.

Spread the potatoes evenly on the baking dish in a single layer; for best results, arrange them skin-side down so they won’t stick. Sprinkle with the chopped herbs, salt and pepper and place in the middle of the oven until they have turned golden brown and tender.
