Coconut Brownies with Walnuts and Dried Cherries

  • 3 sticks butter
  • 8oz. unsweetened baking chocolate, broken up
  • 6 large eggs, lightly beaten
  • 1 cup sugar
  • ¾ teaspoon salt
  • ⅔ cup unsweetened coconut milk
  • 1 ½ teaspoon vanilla extract
  • 1 cup coconut flour
  • 2/3 cup dry flaked coconut
  • ½ cup sweetened dried cherries
  • ⅔ cup coarsely chopped walnuts

Preheat oven to 350F°. Butter a 9X13" baking dish. Melt butter and chocolate together in a double boiler over barely steaming water. Set aside to cool.

In a mixing bowl, mix together eggs, sugar, coconut milk, and vanilla extract. In a small separate bowl, mix together salt and coconut flour, then add to wet ingredients. Stir briefly till just incorporated. Add butter/chocolate mixture and stir to combine. Fold in flaked coconut, dried cherries, and walnuts.

Pour batter into buttered dish and bake for 20-25 minutes, or until a knife inserted in center comes out clean.
