Brown Sugar and Mustard Glazed Salmon

  • 2 T dark brown sugar
  • 1 ½ t salt
  • 1 t freshly ground black pepper
  • ¼ t mustard powder
  • 4 salmon fillets (6 oz each) skin removed
  • 1 t olive oil

Stir together sugar, salt, pepper,and mustard in a small bowl. Trim, wash and pat dry the fillets. Rub sugar mixture into flesh side of fish.

Heat oil in a skillet over medium heat and add fillets, skin side up. Being careful not to burn, cook until rub dissolves and begins to brown.

Turn the fillets and continue cooking another minute or two until fish is done through.
